This is the story of Jorge Levy, the heart and soul behind this Dallas institution, and how a touch of desperation led to the creation of a restaurant that locals and visitors alike have come to adore.

It all began somewhat unexpectedly. Jorge, then working at another Mexican restaurant, was approached by two guests with a proposition: to partner on a new restaurant venture. The location was just down the street, a charming building with a history as a popular Italian restaurant. Despite needing some updates, the young and confident Jorge saw potential. “We thought that we could do it ourselves,” Jorge recalls, but the reality of opening a restaurant soon set in. The renovations and preparations proved more challenging and costly than anticipated, and resources began to dwindle.

Amidst the challenges of construction and menu planning, the perfect name emerged from their circumstances. “Because we were getting to be a little desperate, the name just came to us,” Jorge explains. “Desperados” was born, reflecting both their situation and the bold, adventurous spirit they envisioned for their new Mexican restaurant. With the name settled, roles were defined: Jorge would helm the kitchen, while his partners managed the front of house and administrative duties. Drawing upon his culinary heritage, Jorge teamed up with his mother, a talented cook, to craft the restaurant’s initial menu. He fondly remembers the collaborative process, “My mother was a great cook. She and I worked tirelessly to come up with the first menu. I can still remember the aroma of her kitchen and the sound of her voice as we worked together.”

From the outset, Jorge aimed to offer Dallas diners something unique. “I remember wanting to do something different, something that the people of Dallas had never experienced before.” This ambition to innovate and push boundaries became a defining characteristic of Desperados Mexican Restaurant. They were pioneers in serving ceviche, and Jorge’s insistence on using fresh lime juice in margaritas was considered unconventional at the time. “When my fellow restaurateurs heard that I was going to use fresh lime juice in my margaritas they thought I was ‘loco.'” Other early examples of their innovative approach included the introduction of chimichurri sauce and the now-famous fried flour tortillas for their signature Desperados Tacos.

Despite a booming start, the journey of Desperados Mexican Restaurant has had its share of hurdles. Jorge candidly acknowledges, “Opening a restaurant requires so many moving parts I remember it was crazy right at the beginning. But as business sometimes does, it has had its ups and downs.” A significant turning point came when his partners decided to leave the business, leaving a young Jorge to navigate the complexities of restaurant ownership on his own. “I remember that was a tough time. I was still so young and still new to this country with little book smarts but I always had the drive.” He recounts a particularly challenging period when sales were low, forcing him to ask his employees to wait until Monday to cash their paychecks. Their understanding and loyalty during this difficult time are a testament to the strong sense of community and mutual respect Jorge fostered at Desperados.

Today, Desperados Mexican Restaurant proudly celebrates over 43 years as a family-owned and operated establishment. The restaurant’s longevity is deeply rooted in family tradition, with many recipes originating from Jorge’s grandmothers. “Most of the recipes are my still grandmothers and that makes me very proud.” While honoring tradition, Desperados also embraces evolution, constantly refining and innovating their menu. Jorge’s brother and son are integral to the daily operations, ensuring the high standards set from the beginning are maintained. Even though Jorge no longer manages daily shifts, he remains a constant presence at both Desperados locations, guiding and mentoring his family. Working with family has its unique dynamics, as Jorge notes, “My sons are different and the challenge nowadays is getting everyone to agree. That is a challenge for sure. But I wouldn’t change that for the world.”

Desperados is renowned for its award-winning La Margarita, a signature cocktail crafted with Sauza Conmemorativo, Cointreau, fresh lime juice, and a special secret ingredient. However, the Desperados Tacos are arguably the most iconic menu item. “Our Desperados Tacos are world-famous (maybe not quite world) and are the most ordered entree since the beginning.” These distinctive tacos feature flash-fried flour tortillas filled with white cheese, fajita beef or chicken, fresh pico de gallo, and a slice of avocado. While not strictly traditional Mexican fare, these tacos have become synonymous with the Desperados dining experience.

Beyond the food and drink, Desperados Mexican Restaurant is deeply committed to community engagement. Giving back has been a core value instilled by Jorge and embraced by his family. For over a decade, Jorge organized a Cinco de Mayo festival, raising funds for local charities. Desperados has been a long-time participant in the Dallas St. Patrick’s Parade and established a scholarship fund in 2009 to support local students’ education. They host an annual golf tournament to benefit the police department and organize “Savor Mexico,” a culinary event showcasing different regions of Mexico to further fund scholarships. This dedication to community reflects the heart of Desperados as more than just a restaurant; it’s a pillar of the Dallas community.

Desperados’ impact extends beyond its local community. They’ve participated in major events like the Great State Fair of Texas, even winning an award for their Deep Fried Latte. They catered the VIP party for Superbowl XLV in Dallas, brought their famous tacos to the Coconut Grove Arts Festival in Florida, and have been long-time caterers for the Texas Rangers and Dallas Mavericks, including the Mavericks’ championship celebration.

Jorge’s journey to becoming a successful restaurateur began in humble circumstances. Growing up in poverty in Mexico after his father passed away, he helped his mother by selling candy and gum. At 16, seeking a better life, he immigrated to the United States with his family. Though he once dreamed of being a drummer, he began his restaurant career at El Chico in Lakewood, paving the way for his future success. His sons, Michael and Jorge Jr., initially had no interest in the restaurant business but have now embraced the family legacy, ensuring Desperados Mexican Restaurant continues to thrive for generations to come.
