Ingredients:

  • 1 15 oz. can black beans, rinsed and drained
  • 2 tablespoons sour cream or plain Greek yogurt (or vegan alternative)
  • 2 green onions, sliced
  • 1 tablespoon chopped cilantro
  • ½ teaspoon fresh lime juice
  • ¼ teaspoon ground coriander
  • ¼ teaspoon ground cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon fine sea salt
  • 2 large flour tortillas (10-inch, burrito-size)
  • 1 cup shredded sharp cheddar cheese (or vegan alternative)
  • Cilantro leaves for garnish
  • Salsa for serving

Instructions:

  1. Preheat the broiler to high.
  2. Place the beans in a medium bowl. Add the yogurt, green onions, cilantro, lime juice, coriander, cumin, garlic powder, and salt. Stir, partially mashing the black beans as you mix.
  3. Spread half of the black bean mixture over each tortilla, leaving about a ½-inch border around the edge. Sprinkle two tablespoons of cheese over each.
  4. Working one at a time, roll up the tortilla tightly. Place seam-side up on a cutting board. Hold it tightly so it doesn’t unfold and trim off each end where no filling is present.
  5. Insert 8 toothpicks, evenly spaced, the length of the tortilla, securing it to hold the roll together. Each toothpick will be ¾ to 1 inch apart. Use a sharp knife to cut the tortilla into slices between each toothpick.
  6. Turn all pinwheels cut-side up on a baking sheet lined with parchment paper. Sprinkle each with the remaining cheese. Broil for about 4 minutes, until the cheese begins to bubble and brown.
  7. Sprinkle with cilantro and serve warm with salsa on the side.

Recipe Notes:

  • Make ahead: You can assemble the roll-ups a few hours ahead of time and keep them refrigerated. Slice and broil just before serving.
  • Variations: Add chopped bell peppers, corn, jalapeños, or cooked ground meat to the filling. Use different types of cheese like Monterey Jack or pepper jack.
  • Serving Suggestions: Serve with your favorite salsa, guacamole, or sour cream.

Other Delicious Cold Mexican Appetizers

Beyond pinwheels, there’s a fantastic world of cold mexican food appetizers perfect for warm days or make-ahead convenience:

  • Pico de Gallo: This fresh and vibrant salsa is a staple for a reason. Made with diced tomatoes, onions, cilantro, jalapeños, and lime juice, it’s the epitome of fresh Mexican flavors. Serve it with tortilla chips or as a topping for other appetizers.

  • Mexican Fruit Cups: For a lighter and refreshing option, Mexican fruit cups are a delightful choice. Combine watermelon, mango, pineapple, cucumber, and jicama, and then dress them with lime juice, chili powder (like Tajin), and a pinch of salt for a sweet, spicy, and tangy treat.

  • Vegan Bean Dip: A creamy and flavorful bean dip is always a crowd-pleaser. Use black beans or pinto beans as a base and blend them with spices, lime juice, and cilantro for a delicious and healthy dip to serve with tortilla chips and vegetables.

Warm and Hearty Mexican Appetizers

If you’re looking for something a bit more substantial or comforting, warm mexican food appetizers are the way to go:

  • Mini Quesadillas: Quesadillas are incredibly versatile and easy to customize. Use small tortillas to create mini quesadillas filled with cheese and your choice of fillings like shredded chicken, black beans, corn, or sautéed vegetables. Serve with sour cream and salsa.
  • Nachos: A classic for a reason! Load up tortilla chips with cheese, beans, your favorite protein (like shredded chicken or ground beef), jalapeños, and all your favorite nacho toppings. Bake until the cheese is melted and bubbly.
  • Stuffed Jalapeños (Jalapeño Poppers): For those who like a bit of heat, jalapeño poppers are a fantastic choice. Stuff jalapeño halves with cream cheese, cheddar cheese, and spices, then bake or grill until tender and slightly charred.
