Recipe: Authentic Mexican Churros with Chocolate Ganache

Ingredients:

Churros:

  • 1 cup water
  • 5 tablespoons unsalted butter
  • 2 tablespoons light brown sugar
  • 1/2 teaspoon fine sea salt
  • 1 teaspoon vanilla extract
  • 1 cup (5 ounces/145g) all-purpose flour
  • 2 large eggs, lightly beaten
  • Oil for frying

Cinnamon Sugar Coating:

  • 1/2 cup granulated sugar
  • 1/2 teaspoon ground cinnamon

Chocolate Ganache:

  • 4 ounces semi-sweet chocolate (chips or chopped chocolate)
  • 1/2 cup heavy cream

Instructions:

Equipment: Piping bag fitted with a medium closed star tip (approximately 1/2 inch wide), candy thermometer or deep fryer for consistent oil temperature.

Making the Churros:

  1. In a medium saucepan, combine water, butter, brown sugar, and salt. Bring to a rolling boil over medium-high heat.
  2. Once boiling, remove the pan from the heat and quickly add all the flour at once. Stir vigorously with a wooden spoon or spatula until the mixture comes together into a smooth ball of dough that pulls away from the sides of the pan.
  3. Let the dough cool slightly for a few minutes. Then, beat in the eggs one at a time, ensuring each egg is fully incorporated into the dough before adding the next. The dough should be smooth and pipeable.
  4. Heat oil in a deep fryer or large, heavy-bottomed pot to 375°F (190°C). If using a pot, ensure there is at least 3 inches of oil for frying.

  2. In a separate saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not boil.
