Mendoza’s journey in the restaurant industry began shortly after arriving in the U.S. in 1985. Starting as a dishwasher in a Seattle restaurant near the iconic Seattle Center, he embraced every opportunity to learn and grow. Over the years, he diligently climbed the ladder, mastering the skills of a cook, chef, busboy, server, bartender, and eventually, general manager. This comprehensive experience across all facets of restaurant operations laid a solid foundation for his future success with La Palmera Mexican Restaurant.

His wife, Amelia, also played a pivotal role in this journey. She began working as a server at La Palmera in Everett, and her connection to the restaurant led the owners to discover Hector’s extensive restaurant background. Recognizing his talent and dedication, they invited him to join their team. After dedicating eleven years to honing his skills and demonstrating his commitment at La Palmera, Mendoza was offered a partnership. His leadership and vision ultimately led him to become the majority owner, guiding La Palmera Mexican Restaurant to expand and open a second successful location in Mill Creek.

Driven by a desire to offer his customers the perfect tequila experience, Mendoza embarked on a journey back to Jalisco, the birthplace of tequila. There, he personally selected barrels of tequila, ensuring a unique and high-quality spirit, bottled and branded exclusively for La Palmera Mexican Restaurant. This special tequila will soon be available, promising an even more authentic Mexican dining experience.

Organizations such as Picnic Point Elementary School, Glacier Peak High School, Henry M. Jackson High School, St. Mary Magdalen Parish & St. John Mission, and St. Elizabeth Ann Seton Catholic Church have all benefited from La Palmera’s generosity. Shannon Everist, parish administrator at St. Elizabeth Ann Seton, attests to La Palmera’s significant contributions, stating, “La Palmera does a phenomenal job and is extremely generous to the parish.”
