Mexican Pambazo Sandwich Recipe

Ingredients:

  • 1 bread roll, sliced in half
  • Handful of shredded lettuce
  • ½ avocado, sliced
  • ¼ chorizo, roughly sliced
  • 2 medium-sized boiled potatoes, roughly chopped
  • ½ red onion, sliced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 3 dry chillies, preferably Guajillo chillies
  • 1 garlic clove, roughly chopped
  • ½ red onion, roughly chopped (for sauce)
  • A handful of grated Mexicana Cheddar
  • 1 tablespoon sour cream

Instructions:

  1. Prepare the Dipping Sauce: In a small bowl, combine the chillies, ½ red onion (for sauce), and garlic. Cover with 200ml of boiling water and let it sit for 15 minutes to soften.
  2. Blend the Sauce: Remove the softened ingredients from the water and place them in a blender with 50ml of the chilli water. Blend until completely smooth, adding more water if needed to reach desired consistency. Set aside in a small container for dipping.
  3. Cook the Filling: Heat some vegetable oil in a frying pan over medium heat. Add the sliced ½ onion, chorizo, boiled potatoes, cumin, oregano, and paprika. Fry for about 10 minutes, stirring occasionally, until well combined and heated through.
  4. Make the Cheese Mixture: In a separate small bowl, combine the grated Mexicana Cheese and sour cream. Mix well to create a creamy cheese topping.
  5. Assemble the Sandwich: Place the bottom half of the bread roll on baking paper or tin foil. Spoon on the chorizo and potato filling, followed by shredded lettuce, avocado slices, and the cheese mixture. Top with the other half of the roll.
  6. Wrap and Serve: Wrap the Mexican sandwich securely. Remember to pack the dipping sauce separately. Enjoy your flavorful Pambazo!
