Discovering Authentic Flavors: The Rise of Mexican Food Trucks

Mexican Food Trucks are rapidly becoming a cornerstone of vibrant culinary scenes, offering a taste of authentic Mexico right on the streets. Recently, at the ICT Block Party in downtown Wichita, the diversity and quality of these mobile kitchens were on full display. Among the many options, one stood out, a newcomer named El Gusto. For anyone seeking genuine Mexican flavors, El Gusto is a must-try, and my first experience was nothing short of fantastic.

Sampling from various food trucks that day meant limiting my order at each stop. At El Gusto, I opted for just two tacos, but those few bites were enough to make a lasting impression. Luckily, with El Gusto scheduled to be out and about twice in the coming week, a return visit to explore more of their menu is already planned.

El Gusto keeps it focused with two primary meat choices: birria and carne asada. Choosing one of each, I was presented with tacos generously filled and served on double-layered tortillas. Often, carne asada from food trucks can be disappointingly dry and tough, making it a less appealing option. However, El Gusto’s carne asada was a pleasant surprise – tender, juicy, and bursting with flavor. The birria was equally impressive, offering a rich, savory profile with a subtle hint of sweetness that made each bite incredibly satisfying.

As the first food truck I visited at the ICT Block Party, El Gusto set an unexpectedly high benchmark. None of the subsequent taco trucks managed to surpass the quality and taste that El Gusto delivered. The experience has definitely piqued my interest for a more in-depth review later this month.
