The original salad used French dressing, which is also a great alternative. Feel free to experiment with additions like beans, corn, or black olives to personalize it (though nutritional information will change). I opted for simplicity, and the result was fantastic. Ingredients

  • 1 lb 95% lean ground beef
  • 1 (1.25 oz) packet reduced sodium taco seasoning
  • 1 medium-large head of iceberg lettuce, chopped into bite sized pieces (if you’re new to chopping iceberg lettuce, follow these directions)
  • 1 medium-large tomato, diced
  • 4 oz 50% less fat sharp cheddar cheese, shredded (like Cabot)
  • 4 oz nacho cheese Doritos, lightly broken into bite-sized pieces – the star of our mexican doritos salad!
  • 1 cup light Catalina or French dressing (I prefer Kraft Lite Catalina)

Instructions

  1. Brown the ground beef in a skillet over medium heat, breaking it apart with a wooden spoon. Add the taco seasoning packet and stir to coat evenly. Set aside to cool slightly.
  2. In a large serving bowl, combine the chopped lettuce, diced tomatoes, shredded cheese, and seasoned ground beef.
  3. Just before serving, add the mexican doritos and dressing. Toss gently to combine, ensuring every bite gets that perfect crunch and flavor. Serve immediately to prevent the mexican doritos from becoming soggy.
