Founded in 1965 in Skagit Valley, Washington, this beloved eatery brings the heart and soul of home-style Mexican cooking to the Pacific Northwest. The story begins with parents born in Durango, Mexico, who carried their culinary heritage from Denver, Colorado, to the fertile lands of Washington State.
The family’s journey started in Denver, Colorado, where the matriarch honed her cooking skills, learning time-honored recipes from her mother and sisters. Life took them to Toppenish, Washington, and later to Skagit Valley, where they worked in the local farms. From a family of thirteen, it was the collective effort and dreams of the field-working siblings that paved the way for something extraordinary. Saving diligently, they pooled their resources to establish the first Mexican restaurant in the valley – Mexico Cafe.
In its nascent days, Mexico Cafe was a true family affair. Jessie and Celia Rivas, along with their daughter Helen, were the pillars of the operation. Jessie managed the business, while Celia and Helen were the culinary masterminds in the kitchen, crafting dishes that echoed the flavors of their upbringing. Family members like Tom, Mary, Celeste (Debra), and sister-in-law Mabel contributed to the warm and welcoming atmosphere, serving customers and building connections. Word-of-mouth spread quickly, and Mexico Cafe became a weekend destination, renowned for its chile verde, tacos, and enchiladas.
What truly sets Mexico Cafe apart is its commitment to home-style Mexican cooking. It’s not the typical fare; it’s the kind of food that evokes a sense of comfort and nostalgia. Signature dishes like the Smothered Burrito, Chimichanga, Crisp (patty) taco, and enchiladas are testaments to family recipes passed down through generations. Even the salsa, a mild green onion creation initially designed for less spice-accustomed palates, became a customer favorite. While they now cater to bolder tastes with spicier options, the original salsa remains a beloved staple.
Mexico Cafe has evolved over the years, moving through three locations to finally settle at 1320 Memorial Hwy (State Hwy 536). From its humble beginnings at Avon Allen and Hwy 20, to State Hwy 536, and now its present location, the restaurant has remained a constant in the community. After Jessie’s passing in 1970, Helen took the reins until 1981, when Adolph, the current owner and author of the original story, stepped in. His wife joined him in 1993, continuing the family legacy. Mexico Cafe stands as a testament to the enduring power of family, tradition, and the irresistible allure of authentic Mexican home cooking.
