For those in the know, this mobile eatery might spark a sense of déjà vu, as Primos took over the truck previously operated by La Costena. A big thank you to reader Ryan Muzzy for the tip-off about this gem – it’s the kind of local find you might easily miss otherwise! Nestled in front of Lowes on North Maize Road, Primos is bringing genuine primos mexican food to an area of Wichita that doesn’t often see food trucks, especially those serving up such flavorful fare. Naturally, as soon as word got out about their opening, a visit was in order.

Primos Mexican Food Truck keeps it straightforward with a menu featuring classic Mexican street food staples. Think tacos, tortas, tostadas, burritos, quesadillas, and even hamburguesas – perfect for a quick and satisfying meal. While some might think “another Mexican food truck?”, for those of us in Northwest Wichita, a quality food truck is a welcome treat. It’s a much shorter drive than venturing out to East Wichita for great food!

On my first visit, wanting to sample a range of what they offered, I opted for a ceviche tostada, a shrimp taco, an al pastor taco, and a tripa taco.

Let’s talk about the standout dish: the shrimp taco. It was truly exceptional. The creamy, mayo-based sauce was bursting with flavor, but the real genius was in the preparation of the shrimp. By dicing the shrimp into smaller pieces, Primos ensures that each bite is perfectly balanced, with just the right amount of shrimp. It’s a simple detail, but it makes a world of difference in the overall enjoyment of the taco. Often, with shrimp tacos, you get large pieces that tend to fall out or result in uneven flavor distribution. Primos has solved this problem masterfully.

The al pastor and tripa tacos were also solid choices. The al pastor was expertly seasoned, hitting that sweet and savory spot without being overpowering. The tripa tacos had a pleasant grilled crispness, adding a satisfying textural element.

If there was one slight disappointment, it was the ceviche tostada. The balance of ingredients felt a little off. There seemed to be a disproportionate amount of tomatoes, onions, and cucumbers compared to the fish. As a result, the fresh flavors of the fish were somewhat lost, overshadowed by the stronger flavors of the vegetables.

However, those tacos? Absolutely fantastic. They alone are enough to bring me back to Primos Mexican Food Truck whenever I’m in the Northwest Wichita area on weekends. If you’re a fan of primos mexican food and find yourself in that part of town, it’s definitely worth stopping by and giving them a try.
